Gourmet route n°7

Rix-Trébief > Nozeroy

Welcome to the Nozeroy plateau where a gourmet itinerary in four stages is taking shape and will thrill the taste buds with its tasty local products.

La Fruitiere des Pâturages de Nozeroy

To start this gourmet stroll, go to the Rix-Trébief fruit farm. It is here that cheesemakers transform the milk production of 23 local farms on a daily basis.

650 tonnes of delicious Comté cheese are made here, or around fifty wheels per day! The herds graze in the summer in the surrounding pastures, at an altitude varying between 700 and 1 m. These meadows are made up of several dozen different plant species, which explains the unique taste and floristic richness of Comté de la fruitière.

The cooperative's store beautifully highlights the Jura region by offering a wide selection of regional products. You will of course find the Comté of the cooperative at different degrees of maturation (sweet, fruity or old), but also other local cheeses such as Morbier, Mont-d'Or or Petit Mournier...

To accompany them, a selection of local cured meats and drinks completes the store. A plus: the panoramic view, which allows visitors to admire the know-how of the cheesemakers.

The Saloir des Remparts

The route continues in the small medieval town of Nozeroy, at the Saloir des Remparts, an essential food shop which has been offering delicious local specialties since 2015... but not only that!

Romain Menin and his team strive to market superior quality products by favoring short circuits and promoting the local economy. Always French, the meat is often local, as for the sausages, various cold meats, terrines and other Franche-Comté specialties, they are entirely made by the House from hand-picked ingredients...

The brand's reputation is well established: butcher's shop, charcuterie, rotisserie and ready-made meals, there is something for everyone. Other regional products are also offered. This is the perfect opportunity to discover the comforting flavors of the Jura region, during a convivial meal with family or friends. Will you be able to resist the “crêpinettes”, one of the establishment's specialties, made from a pork stuffing with Comté and Vin Jaune du Jura?

The Cellar of the Tower

A few steps further after passing the Clock Tower, is the Cave de la Tour. Taken over in 2019 by Mathieu Dayet, this thirty-year-old brand offers for sale a wide choice of wines (white, red, rosé and sparkling), spirits and beers of all kinds.

You will obviously find carefully selected specialties from the Jura and the region, to name only Savagnin, a rare white grape variety with notes of dried fruit and spices… Macvin, a delicate liqueur wine… the heady Vin de Paille, ideal to accompany foie gras... or even the famous Vin Jaune du Jura... A wide range of drinks to ensure that all your food and wine pairings are a success and discover the wine-growing particularities of the Jura region.

Other quality regional and artisanal drinks are also available: beers, absinthes, lemonades, syrups, apple juice... Good news, the Cellar will very soon offer its own artisanal beers, brewed in an old farmhouse located a few kilometers away , in the town of Mignovillard…

The Val de Mièges Butter Cooperative

To end this gourmet itinerary, let's go to the exit of Nozeroy where the only butter cooperative in the Jura is located, multiple medalists in the Fromonval de Mamirolle professional competition for its characterful butter.

Created in 1945, this company brings together to this day the “trifle” of… 37 dairy cooperatives which have joined forces to pool their cream and thus produce a traditional butter of superior quality, made from cream from the Jura massif. and guaranteed GMO-free. More than 700 tonnes of butter are manufactured each year by a team of 6 employees.

Collected twice a week, the cream is first pasteurized then matured in the traditional way, thus allowing the typical flavors of “Nozeroy butter” to develop without any addition: neither flavorings nor colorings!

The cream is then churned and transformed into butter which will be shaped into different shapes. Although the cooperative does not offer its products for direct sale, they are sold in fruit farms in nearby Comté, as well as in many other brands in the region, listed on the cooperative's website.
