On the Nozeroy plateau, in the space of around fifteen kilometers, a gourmet itinerary in four stages takes shape and thrills the taste buds with its tasty local products...

The Val de Mièges Butter Cooperative

First stop on this gourmet itinerary: Nozeroy, where the only Jura butter cooperative is located! The company, which has existed since 1945, brings together the “trifle” of… 37 county milk cooperatives. Fruit producers from the “Plateau” who have joined forces to pool their cream and thus produce a traditional butter… And what butter! Of exceptional quality, it is made from cream from the Jura massif, and guaranteed GMO-free.

Collected twice a week from the surrounding fruit farms, the cream is matured in the traditional way, allowing the typical flavors of “Nozeroy butter” to develop without any addition: neither aromas nor colorings! Made up of five employees, the “Coop” team shapes this butter in different forms (cubes, lumps or even wafers) and produces more than 700 tonnes per year, the majority of which are marketed in the region. Note that the cooperative recently received the silver medal at the Fromonval de Mamirolle competition.

The Jura Snail

The route then continues to l'Escargot Jurassien, a helical farm located in Billecul. A lover of the region, Sébastien Saglier created a farm of “gros gris” snails, chosen for their more tender flesh than that of Burgundy snails. Everything is done manually: every year in mid-May, the farm's snails are installed in a greenhouse "nursery", where they stay for 45 days to be protected from the cold; then raised outdoors in the farm's parks, they grow peacefully on a plant cover adapted to their needs.

When the time comes, the production is transformed on site by hand in the farm's laboratory, where Sébastien develops his tasty recipes using local products. It offers a whole range of products labeled “organic” or “from organic farming”. The packaging forms are original: in shells, but also in terrines, cassolettes or even “Crocs'Apéro” – with seasonings with local flavors: Jura wine, wild garlic, cheese or even mushrooms… These products of exception are available all year round in the farm's shop or in the region's markets. 

La Fruitière de la Baroche

At the gates of Arsure-Arsurette and on the edge of the Haute-Joux massif, the fruit farm in Comté de la Baroche looks great! Created in 2005, it won an award at the agricultural show for its fruity Comté. At the heart of the AOP Comté zone, with more than 6 million liters of milk processed each year, the fruitière de la Baroche details its tasty Comté according to different maturations: 6 to 8 months for the “sweet”, 14 months for the “fruity” », 18 months for the “old” and up to 30 months for the “extra old”, available during the holiday period. 

With its panoramic view of the manufacturing workshop, the fruitiere store sells numerous Franche-Comté products in addition to the Comtés and white cheeses made on site: morbier, bleu de Gex, tommes, cream, cold meats, honey, drinks or even chocolates.

The Honey House of Hautes-Joux

To complete this gourmet journey: head to Les Chalesmes where Julien Favret, a passionate beekeeper, has set up his Miellerie des Hautes-Joux in a former sawmill. At an altitude of 1000 m, this human-scale operation, which holds the “Mountain Honey” designation, has around 200 hives which produce high-quality, 100% local honey. Its harvest strongly depends on climatic conditions since it is exclusively produced in mountain areas, but this particularity allows the bees to spend the entire year in the same place. The farm's different apiaries are all located within a maximum radius of 10 km around the honey house.

So head quickly to Les Chalesmes where succulent nectars await you, with unique tastes and textures: dandelion honey, “all-flower” mountain honey, linden honey or even fir and forest honey…
